A Journey Through Memory is a gastronomic experience created by Chef Rafa Soler, in which each dish connects with origin, territory, and the emotion of remembrance.

A proposal that explores the most recognisable flavours of our land through a contemporary lens, combining produce, technique, and sensitivity in a menu designed to surprise and move.

In this GastroEvent, Audrey’s invites guests to discover Calpe through a cuisine with a strong sense of identity, where memory is transformed into creativity and every dish tells a story.

The experience is completed by a special wine pairing by Grupo Velbendi, designed to enhance every nuance of the menu.

(01) STARTERS

 

  • Avocado pickled in an escabeche made from its pits, with a bouquet of fresh herbs
  • Wild mushroom flan with black truffle

  • Red pepper grilled over embers, with cured pork fat and egg yolk

  • Santa Pola shrimp with silky Marcona almond cream
  • Shellfish, mollusc and seaweed soup

  • Market fish with cauliflower, morteruelo and mussels

  • Guirra suckling lamb; shank, sweetbreads, liver and tenderloin
