An exclusive dinner that reflects the richness of the culinary roots of our Michelin Star chef, José Manuel Miguel, through traditional recipes with history, reinterpreted with avant-garde techniques and a contemporary approach. Dishes that awaken the memory, surprise the palate and invite you to rediscover the essence of our cuisine from an innovative perspective.

● Bay fish flower from Altea, rouille foam, and our bouillabaisse

● Sea urchin:

Vegetable gelée with Palo Cortado wine, comté cheese and dentex fish tartare with apple and mint

● Maresme peas:

Octopus, egg yolk gel, ham consommé and rosemary air

 

Main courses

● Red mullet:

Cauliflower textures and trocadero lettuce soup

With celeri and truffle millefeuille
